Easy Slow Cooked Beef

This recipe comes from the Delicious Obsessions blog.  They call it the "Easiest (and most delicious) Crock Pot Beef Ever".  I tend to agree.  The hardest part of this recipe is peeling and chopping all the garlic!

Slow cooking not only makes meat very tender, it also makes it easier to digest.  I am learning that looking after your digestive system is one of the best things to do for good health.


Ingredients

A beef roast of suitable size and shape to fit your slow cooker.  I usually use a roast around 1.2-1.4 kg
12-15 cloves of garlic, crushed and finely chopped
1 cup sweet onion, approx 3-4 medium onions, finely sliced or diced
1/2 cup Coconut Aminos* (the original recipe uses Worcesteshire sauce but I use Coconut Aminos to make it soy free)
1 cup beef stock or water plus 1 teaspoon organic vegetable broth
1-2 teaspoons freshly ground black pepper
Sea salt to taste - I don't find it necessary with the Coconut Aminos and I think if using Worcestershire sauce that would definitely be salty enough.

Method

Pre-heat your slow cooker.  Add the roast.  Toss in onion and garlic.  Pour over Coconut Aminos and stock or water.  Add pepper and salt if using.  Cook on low 8-10 hours.  Serve with mashed potato and steamed vegetables.  Use the broth to make gravy or just spoon a little over each serving.

I save the rest of the broth, storing in portions (approx 200 ml) in the freezer and use it to make a delicious gravy for rissoles or steak.  To make into a gravy add 2 tablespoons of wholemeal flour to a small saucepan.  Add a little cold water and stir to form a smooth paste.  Add the saved broth and a little water if needed to make up to 250ml and stir well to blend.  Bring to boil, lower heat and simmer until gravy thickens.
